AISI 304 Stainless Steel in Professional Bakeries — Hygiene, Durability and Aesthetics
AISI 304 stainless steel is the indispensable material for professional bakery and pastry equipment. It is virtually mandatory on all food-contact surfaces — bowls, work tables, kneading machines, mixer bowls.
What is AISI 304?
AISI 304 is a stainless steel grade under ASTM A240 standard. Chemical composition:
- Chromium (Cr): 18-20% — corrosion resistance
- Nickel (Ni): 8-10.5% — flexibility
- Manganese (Mn): up to 2%
- Carbon (C): below 0.08%
This composition makes the steel stainless and food safe. The most widely used stainless steel grade for food processing surfaces in Europe and the USA.
Hygiene
Bacteria-resistant surface: Smooth surface prevents bacterial growth. No microscopic pores means bacteria and yeast colonies don't adhere.
Food safety inspections: Turkish Food and Drug Regulation, EU EC 1935/2004 and US FDA standards require food-contact surfaces to be AISI 304 or higher (AISI 316L).
Sterilization resistance: Withstands steam sterilization (140°C+) and chemical sterilization (chlorine-based disinfectants).
Durability
Corrosion resistance: Chromium oxide passive layer resists dough acids, salt, vinegar, lemon — non-rusting in steam environments.
Mechanical durability: Brinell hardness ~200 suitable for daily continuous use. No deformation over years.
Temperature range: -200°C to +870°C stable structure.
Aesthetics
Professional look: Matte or polished surface — standard of modern professional kitchen and pastry aesthetics.
Easy maintenance: Hot soapy water + microfiber. Don't use steel wire brush — surface scratches.
Long-term aesthetics: With proper care, AISI 304 surfaces look new for 15-20 years.
AISI 304 vs AISI 316L
| Property | AISI 304 | AISI 316L |
|---|---|---|
| Corrosion resistance | Good | Excellent (seawater, chlorine) |
| Cost | Standard | 40% more expensive |
| Bakery/pastry | ✓ Standard | Generally not needed |
AISI 304 in Dirmak Machines
All Dirmak Makina's industrial mixer, dough kneading, bread slicer and dough sheeter machines are manufactured with AISI 304 stainless steel on food-contact surfaces. CR (version inox) variants provide additional aesthetic protection.
FAQ
